Life Lately...

I feel like the days are flying by lately ... maybe it's because Easter was early this year!? But it seems like in a flash St. Patrick's Day, Spring and Easter flew by. And now it's the last day of March!? Pretty soon we'll be onto spring vacations, Lila's 5th birthday, and summer fun! I'm excited because we're going into my favorite time of year for sure ... 

Here's what we've been up to lately ...

I got my hair colored last Friday and the way they styled it after made me feel like a Texas pageant queen. Curls for days! Hard to tell in this pic how "big" they were, but it was kind of fun for the night. 


For Easter we couldn't figure out how to do the timer setting on our phone cameras and have it in a place that worked to get our whole group in the picture so we whipped out my trusty selfie stick for the win! LOL! Here's the test shot of Grant and I - not bad!


I made a new "healthy" side dish for Easter - vegetable tian, which will be a great way to use up squash in the summertime! It also looks pretty which is always a plus ... 


My sister-in-law brought over some purple tulips and they look so springy and pretty on our table ... we have purple tulips that bloom in our yard every year too, but until then I love having fresh flowers inside. 


I picked up some new springy brights the other day - a new Lilly Pulitzer dress I wore for Easter dinner on the left and a bright blousey top on the right from LOFT. I love the springy colors!


Steak. Mmm ... I could eat grilled steak and veggies every night. I also roasted broccoli and peppers, which is one of my favorite ways to cook veggies. Toss with a tiny bit of olive oil and sea salt and roast at 400 for about 15 minutes. So good!

Scenes from our Easter weekend

We had a great weekend full of family and fun, celebrating both Easter and family birthdays. Saturday was a beautiful sunny and dare I say ... WARM day! 

We had brunch with Grant's family followed by some fun egg hunts outdoors.

A Good Friday, indeed!

Happy Good Friday for those of you who celebrate Easter! I'm excited for the holiday weekend and lots of family time. 

Here were some of my favs from the week ...

We are celebrating Easter wth Grant's fam on Saturday and mine on Sunday. I'm excited to stuff and hide the Easter eggs and get the kids' baskets all ready! I've mentioned before, but our tradition for Easter baskets is that they are always "vacation" themed - so they include new bathing suits, hats, sun glasses, flip flops, maybe a sundress for Lila, etc. All stuff to prep us and get us excited about our Spring and Summer vacations!! Owen's also getting a super cute "Cars" Lightening McQueen backpack this year so he can bring his own carry-on onto the flight! And of course they have a few little candy treats and little toys as well. So fun! 


Silly selfies with these kids after work. They always love to take pics and now Owen always says "I see? I see?" 


I'm in a friend's wedding this summer and found the perfect strappy sandals after trying on about a million options. Bonus! They were only $60 on Amazon! 


Speaking of, Lila's the flower girl in the wedding so to "prep" she's been wearing her old flower girl dress from two summers ago in the yard (it's a TAD short in the back, lol). The rain boots are a nice touch too, no? 


And here's my bridesmaid dress. I need to get it altered (short girl probs!) but it's a fun little long beaded number.


We also had a "better late than never" St. Patrick's day meal this week and it was so delish ...

Easter Eggs

Decoating Easter Eggs is a fun, cheap and easy craft and we already had everything at home. Win! I really need to do more "crafting" with the kids but often it's a mess or requires a bunch of stuff we don't have and I'd rather just not bother. 

This is easy though! Here's what we did: 


Hardboil your eggs and let them cool. Meanwhile, prep your colors! For each color, you need 1/2 cup boiling water, 1 tsp white vinegar and about 20 drops of food coloring. My "purple" turned out greyish/black (oops), but otherwise we had red, yellow, orange, green and blue, but you can mix and match colors and get as fancy as you want. 


Then we decorated the eggs. We colored some with crayons (the wax blocks out the dye), used tape on others and then rubber bands on some too. The kids mostly liked using tape and coloring on them, but if you're going for looks the rubber band ones turn out the prettiest.

The kids were super cute trying to be "careful" with the eggs - I don't think they understood what hardboiled means, but nevertheless they were very gentle. 


Then we let them dry on a rack for a few minutes ... 


Then filled them in a pretty glass bowl on our breakfast table. 


Fun and easy! The kids were very proud of themselves and they make a festive little addition to our table.

Spring is here!

Happy Monday, and Happy Spring! I'm so glad spring is finally here. Not that it helped our weather this weekend, but it means we're closer to summer! I treated myself with a pretty $6 bouquet from Whole Foods to celebrate. 


We had a nice little weekend mostly at home. Saturday morning we kicked off with a little breakfast and tea. Don't all toddlers drink tea out of cups and saucers? So very British of us (and with a side of goldfish no doubt, haha!)


We dropped Grant off to have some guy time at a beer festival and headed out on our way to run a few errands. Cheese! 


Apparently it was our Whole Foods' "birthday" so they were passing out fun hats, which they kids naturally couldn't get enough of. Now I need to figure out how to throw them away without the kids noticing ... haha.


Saturday night I made one of my favorite "one pot" meals - grilled chicken, artichoke hearts, spinach, roasted cherry tomatoes and garlic with a few drizzles of balsamic and olive oil and topped with feta. Easy and delish. 


Sunday we lounged around and the kids both slept in until 8:30! Yes! After breakfast we decided to decorate Easter Eggs the old fashioned way! I saw the kits at the store but realized it was really easy to do yourself. Such a fun and festive little craft!

Finally Friday ...

Happy Friday! The sun is shining for the second day in a row, it's Friday, the weekend's ahead - the stars are aligning! Here are some of my favorites from the week ...

+ Wearing green for St. Patrick's Day! After Lila pinched me because I wasn't wearing green (give me a break, I was still in my PJs!), I realized I only have one green shirt these days ... 


+ I got a manicure TWO WEEKS ago today and it finally just got its first chip. I'm shocked! Normally mine chip after a couple of days, maybe a week max, but this one has lasted forever (and it's just a normal mani, not shellac). I went to a new place this time so I'll have to try it again! 


+ Our batch chicken grilling continues, this time with taco marinade and a lemon herb marinade. Both delish for salads, tacos, etc. to eat throughout the week!


+ Ok so this isn't a favorite since poor Grant is out trying to repair our missing fence (notice the giant gap!? Thank you wind storm!), but isn't Owen so cute out there with his little dump truck and shovel trying to help! 


+ I got my first "Kimoji" via text the other day, LOL!!! Do any of you use these!?

Happy St. Patrick's Day!

Digital Designs Scrapbooking: Saint Patrick's Day Irish Blessing:

Are you wearing green today? Such a funny little tradition. I'm an Irish gal - my Grandpa's family is from there and some of them still live there today. My name is Irish. And that's about the extent of it. I did get a chance to visit Ireland in high school and it's absolutely beautiful. Green, lush, amazing. My favorite part (as with many places in Europe) is the countryside, outside of the city. If you ever go, the Ring of Kerry is a must!



And for those that want a festive meal, here's my favorite Corned Beef in the crockpot recipe. We're likely doing ours this weekend instead since it's been a busy week.

Power's out!


During our crazy weekend rain and wind storm we ended up losing power on Sunday afternoon for about six hours. The worst part was that half of our backyard fence also blew down, meaning that until poor Grant fixes it, we now look RIGHT into our neighbor's house - and they look into ours. The good part is it wasn't out TOO long and most of it was during the day. However, losing power definitely makes you appreciate electricity and how much we rely on it! 

The kids had fun "pretending" they were hiding from the storm. Here is Lila "reading a map on how to escape to somewhere tropical." Lol. Owen was her happy companion. And so was Curious George.


Thankfully, the skies cleared and today was a beautiful sunny day!! 


Did I mention I'm counting down the days until summer?!

Easy Cioppino

As I've mentioned, one of my "goals" in the New Year was to try cooking new / more adventurous things! I LOVE looking for new recipes and have been trying to make one "special" dinner every Saturday - mainly for two reasons. One, because we eat grilled chicken and various varieties of salads for dinner ALMOST every night during the week (#easy ... #butboring). But also because Grant and I don't get many date nights and even though some of these meals are a tad pricier, it's WAY cheaper than paying a babysitter and going out. Plus it's fun! 

This weekend I made the cioppino recipe from Serious Eats. It was quick and easy and not hard if you don't have experience cooking seafood or shell fish. 

Overall this is a fun and "fancy" recipe for a great at home dinner date!!

Springin' into Monday

Good morning!! Hope you had a great weekend! It was super stormy/windy/rainy around here. So thankfully spring is on it's way, and even though we've officially "sprung" forward ... it's got me a little bit like ...


Losing an hour is tiring!! 

Despite that we had a pretty good weekend. I had plenty of coffee, naturally ... 


And because it was so gross outside we hit the pool on Saturday morning for a little indoor splash pad fun. 


Saturday night I continued my adventures it trying to cook new things by making Cioppino!! Have you ever made this before? It's essentially a seafood stew of sorts and is quite delicious! It's a tomato/wine broth with mussels, scallops, prawns and cod. I think the traditional version includes a giant crab leg too, but we went without. 


Sunday we met friends at the zoo and it was POURING!!! We all hid in the tropical house for half the time, which felt amazing! 


And had to stop for a little drive in burger and fry action on the way home! 


In the afternoon a wind storm rolled in and despite how freezing and miserable I though it was, the kids wanted to play outside ... BRRRR!
