Workin' away


Happy Monday!! Work has been nuts lately and this week I'm at a conference all week downtown! Ready for this thing to be over. And, even though I worked part of Sunday we still managed to have some fun this weekend! 

Here's what we were up to ...

Saturday morning meant lots of coffee and PJs. You can't tell from the pic but my PJs say "I will be fine once the coffee kicks in" - oh isn't that so true!! 


Then it was time to hit Costco! And even though it was barely 11 am when we were leaving the kids begged to have a Costco lunch! Cheap and easy are hard to say no to so we had some pizza and a berry smoothie before heading out.


After naps we headed outside! It was beautiful and sunny and even though it wasn't very warm the kids wanted to pretend it was summer. Even the cherry blossoms are starting to bloom!


Cheese!! A little cold not to wear coats, but fun to see signs of spring.


After the kids went to bed, Grant and I continued our "at home" weekend date night tradition with more scallops! This time atop mashed cauliflower, roasted broccoli, and balsamic mushrooms. So good!! And even if we can't go out all the time, it's fun to make fancy restaurant type meals at home! 


Sunday we lounged around the house and Lila gave us all a check up with her Doc McStuffins kit. I asked her if she was Doc McStuffins (which is a show on Nick Jr if you didn't know) and she relied "No, I'm Elsa McStuffins." Lol!


Then I headed downtown for a work event to kick off our conference and also film another video (thankfully I didn't have to be in this one!)

It'll be another busy week for me! I'm hoping it goes by quickly! Hope you have a great week!

Seared Sea Scallops with Shaved Brussels Sprouts and Pancetta

Since we don't get out much, it's fun for Grant and I to have a "fancy" dinner at home on the weekends after the kids go to bed. This weekend I made seared scallops with shaved brussels sprouts and pancetta. So delicious! It felt like we ate out but wasn't as expensive - a win! 


I found the recipe on Pinterest, here.

Seared Sea Scallops with Shaved Brussels Sprouts and Pancetta
1/8 lb (2 oz) pancetta sliced into cubes (you could also use bacon)
2 shallots, finely diced
1/2 lb brussels sprouts, cleaned and sliced into thin strips. 
2 TBL fresh lemon juice
6 sea scallops
1 TBL veggie oil
1/2 cup white wine (I used Sav. Blanc)
1 tsp fresh thyme
3 TBL butter

Heat a saute pan over medium and add the pancetta. Once the fat begins to render, add the shallots and saute until the pancetta is crispy and the shallots are tender. Once they are booked, add the shredded brussels sprouts and lemon juice and saute for about 5 minutes, until the sprouts are tender but still bright and green. Remove from heat and set aside.

With a paper towel, pat scallops dry and season with salt and pepper. Heat oil over high heat in a saute pan. Once the oil is hot and slightly smoking, add scallops and sear for 3-4 minutes a side until golden. Check after 2 minutes to avoid over cooking. Seat aside

Reduce heat to medium and add wine. Simmer until it reduces to about a tablespoon (about 5 minutes). Add thyme and 1 TBL of butter at a time, whisking until it's incorporated into the wine. 

To serve, place half the sprouts mixture in each bowl. Top with three scallops. Top scallops with salt and pepper to taste. Then butter thyme sauce over the scallops and sprouts.

Good Morning, Sunshine

Happy Monday! This weekend flew by as they all seem to, and I'm in the throes of my two busiest weeks at work yet prepping for a big conference on March 1. We did manage to have lots of outdoor fun this weekend though because Saturday gave us a hint of Spring! It was sunny all day, flowers were blooming (I saw crocuses of course but even daffodils too!). 

We hit the zoo for a long morning walk. Cheeese!

Naturally we had to feed the ducks too!


In other exciting news (lol), I'm finally off of my ridiculous eye drop regime! Still using the moisture drops but otherwise good to go! Loving Lasik. Seriously can't recommend it enough!


Saturday night Grant and I had a little at-home date after the kids went to bed and I whipped up a nice little scallops dish. Will share the recipe tomorrow! Definitely date worthy!

Pesto zoodles with chicken and roasted tomatoes


I got a spiralizer this summer (for under $10 on Amazon) and have only used it a couple of times, but saw this recipe on Pinterest and really wanted to try it! Not only are "zoodles" healthy, but they mix up our dinners since we've been having a ton of salads lately. It's nice to have a hot meal! 

This is a super easy recipe especially if you already have grilled chicken on hand like I did.

Pesto "Zoodles" with Chicken and Roasted Tomatoes
Three chicken breasts, grilled and sliced (you could also use pre-cooked/packaged kind like from Trader Joe's) 
1/4 cup pesto (I bought mine)
4 "grocery store sized" zucchinis (I've tried to spiralize the giant garden grown kind and it doesn't work very well)
1 cup cherry tomatoes, cut into halves 
2 TBL olive oil
Parmesan to top
Salt & Pepper to taste




Preheat your oven to 400. Toss your cherry tomato halves with 1 TBL olive oil, salt and pepper to coat. Place on a foil lined baking sheet and roast for 10-15 minutes until they start to caramelize. I also blasted mine with the broiler on high for a minute to get a little charring on them. Meanwhile, spiralize your zucchini into long noodle-like shapes. In large skillet, place your remaining TBL olive oil on medium heat and get warm. Cook your zoodles for a few minutes until just soft (make sure not to overcook). Then toss with pesto and top with chicken and your roasted tomatoes. Top with more S&P, and parm to taste.

Long weekend fun!

I live for long weekends and this one was so nice because we relaxed, hung at home, had a nice little date and slept in al three days (which is 8 am around here but still not bad!) 

On Sunday the kids woke up to little Valentines which meant sugar highs before breakfast! Yes! 


Then I made a special dinner for Grant and I - rack of lamb, roasted broccolini and a green a salad. I've never made rack of lamb before so was worried abiut overcooking but it turned out deliciously!



Monday we had the day off of work and lounged around most of the morning until the grandparents came over so we could go out on a date! We finally saw the new Star Wars movie and then went out for Greek food. A nice way to close out the weekend! 

Buttery popcorn! Yes! 


We left the grandparents with some flowers and a bottle of Lolea white sangria which I think is the cutest ever! Have any of you tried before? I will have to get a bottle for myself!

Did you know ...

I don't talk about work much here but I've been in various PR/communications jobs over the years ... And over the years I always seem to be "cast" in interesting roles as part of work projects.

This week I got to cross "music video grunge band groupie" off of my bucket list! HA!! I don't look too authentic, but I blended in well with my 90s Nirvana style oversized plaid, thick knit cap, and rocker bracelets. 


The shoot took alllllll dayyyyy and I couldn't get the dang song out of my head after but it was pretty fun.

My other gigs have included pharmaceutical sales hand model (lol!!) - holding pill bottles pieces of scanning equipment in a lab coat - haha ... Although all you could see were my hands or arms.

And ... my personal favorite ... The time I duped Grant into coming along to a Halloween store costume shoot for one of my work clients. Somehow we were cast as the viking couple (which is actually appropriate since that was our college mascot!). As if this picture wasn't embarassing enough, the store had giant floor to ceiling banners of it ... I was also on their website as a flapper girl complete with short black wig and fake mole! 


Naturally all of my modeling gigs have been unpaid (haha) but good for a few laughs!!! 

Now you know one trick to PR is that most companies use employees in their marketing or ads!! Free labor!

New Dinner Ideas ...

Since we've been trying to eat a lot of easy meals during the week there hasn't been much variety (read salads with chicken, salads with prawns, chicken and prawns with a side of veggies, etc), so I've been scrolling through my archives to find easy but delicious recipes I can make in advance and cook quickly on a busy weeknight. I LOVE this recipe I've made many times - Green Enchilada "Lasagna" Casserole - and the kids do too! It's super easy and you can make in advance, pop in the oven and be all set.



I've also been pinning up a storm lately and have been loving these ideas ...

+ Skinny Taste always has some of my favorite easy and healthy recipes. I always forget about stuffed peppers as an easy idea and we always seem to have peppers in the fridge.




+ I've also been wanting to try Skinny Taste's Seattle Asian Salmon Bowls - they look so delicious and "fancy" without being too hard! And of course, given that "Seattle" is in the title (yes we sure are known for salmon!), I had to pin!



+ Speaking of fish, we made fish tacos a couple of times this summer and they were SO GOOD, but there's no reason we should have to wait until summer! I pinned this recipe and think they look so good with that creamy avocado slaw! Yum!

Happy Monday

Happy Monday! Hope you had a lovely weekend. I had a glorious weekend, because as I shared Friday, I got my Lasik done and WOW - it's AMAZING!!!!! It seriously took less than 10 minutes start to finish, immediately after I could see (it was foggy but I could SEE well!) and the after a three hour Valium-induced nap (they give you Valium so you can sleep through the bad watering/burning that happens in the hours following), I woke up with nearly perfect vision. They are a bit scratchy still and I'm on a ridiculous eye drop schedule, but at my post-op appointment less than 24 hours later I had 20/15 vision! Amazing! I was also surprised I wasn't left with zombie apocalypse bloodshot red eyes after - here I am right after my post-op!


On Saturday, Grant took the kids out while I was at my post-op appointment, which meant I had time to sneak in a quick pedicure before going home to "rest" my eyes. I tried a book on tape with Amazon's Audible app. I got bored after about 30 minutes, but it was cool to try. 

Sunday I decorated a bit for Valentine's Day, which meant a cute little banner on the mantle. Another Target $1 bin special! 


Sunday morning we went out for a nice walk around Greenlake to get some fresh air before the Super Bowl. It was such a pretty morning here! Cheeese!

We stopped at a little "walk up" coffee stand and Lila was thrilled to order her own how chocolate. 


Yum! 


OK now let's talk Super Bowl. Did you watch!? To start - I was AMAZED by Lady Gaga. Anytime I hear her sing something serious I'm always in awe of how good her voice is. I did get a big kick out of this though ... She did look "patriotic" to say the least!!


I also was a bit underwhelmed by the commercials this year! Usually I have a few favorites but didn't really have any of them stick out to me this year! Did anyone else feel the same?!

I was kind of surprised with the outcome but was really happy for Peyton Manning. Hopefully he can retire into the sunset with an amazing Super Bowl win.

Happy Friday

Happy Friday!! It's been a busy week here with work projects and our whole house being sick. But! I'm off work today because I'm finally getting LASIK later this morning! So long contacts/glasses!

Owen was up a million times on Tuesday night with a fever and coughing and coughing, and the rest of us all seem to have a cold too. But by the morning he was in his usual jolly spirits!!


His doctor recommended we give him herbal tea with honey since toddlers can't have cough meds, and I thought yeah right lady, there's no way he'll drink tea but low and behold, add some fruit snacks and make it a party and he loved his tea!! And it actually helped!


We are going to have a low key weekend at home as my eyes recover but I'm hoping they are good to go in time to watch the Super Bowl on Sunday!!

Groundhog Day

So it's Groundhog Day here in the US. I don't really believe in this ridiculous holiday, but ALWAYS wish for an early spring and get mad when the groundhog calls for six more weeks of winter. Why I get mad, I don't know. But whatever.

Did you ever see the old movie, Groundhog Day!? Where the day repeats over and over and over?



In 'celebration' of today, I thought it'd be fun to share my ideal Groundhog Day - what I'd do if I had to repeat a day over and over.

First, I'd wake up early on a warm summer day (and naturally, with no alarm clock needed) to a quiet house where I'd go downstairs and sit outside on the patio in the warm morning air.

I love the morning sun streaming down on our backyard.



Coffee enjoyed outdoors during a quiet morning is also one of my favorite times of day.



Then the family would wake up and we'd have an indulgent breakfast. 




Then maybe we'd hit the beach. Maybe a tropical beach (which we'd magically appear at?) or maybe one around home.




Then while the kids napped, I'd enjoy a relaxing book and cocktail.



And maybe a swim!




Then it'd be happy hour!! I love a fun cocktail especially on vacation.



Bloody Mary's are always a good idea ...




Then I'd enjoy a delicious homemade meal outside. I love eating al fresco in the summertime. Love BBQ ribs and corn in the summertime!



And giant shrimp cocktails are one of my favs too ...



Then maybe we'd have a little backyard campfire!



Or maybe go out for ice cream!



And then close the day by watching some football!! Even though their games are usually during the day, a night game would be fun too.




And that's it. Essentially I guess I really am just wishing for summer.
