A week of dinners

I love hearing about what people eat on a daily basis. It's great for recipe ideas and inspiration. Let's be honest - it's hard to want to get creative with recipes when you are so busy. So, here's a look into our dinner schedule last week. Some homemade. Some take out. Some healthy. Some not so healthy!
 
  
Monday. Grant worked late, so the kids played while I made this quick and easy dish. I sliced some leftover grilled chicken, chopped some broccoli and then sauteed with teriyaki sauce. I served mine over Miracle Noodles (if you haven't heard of these, Google immediately - zero calorie noodles), and the kids had theirs with some rice. Easy and delicious!


Tuesday. We served the kids leftovers and I had some work to do after they went to bed, so I ate and typed at the same time. I made my go-to salad, which I make ALL.THE.TIME and never tire of. Chopped romaine, diced cherry tomatoes, diced cucumber, dry salami and an Italian ranch dressing. My favorite and we always have these ingredients in our house. 

Wednesday. On this night, Lila wanted breakfast for dinner!! Mainly because she'd picked out a new "Frozen" cereal at the store (which essentially is Lucky Charms but with a picture of Elsa on the box and instead of rainbow marshmallows, it has white "ice" and blue "snowflake" ones). I made a Southwest-style scramble with cheddar, green onions and cilantro, and topped with salsa, sour cream and avocado slices. A side of bacon never hurt either. And in case you wondered, I resisted having coffee with it :) 



Thursday. Our roof project was in full swing, so this night we got takeout. Burgers and fries for the win!
 


Friday. The official start of football season!!!! Go Seahawks!! The game didn't start until 7 p.m., so the kids had an "appetizer" dinner of random fruits, crackers, cheese, yogurt and veggie sticks, and we kicked off football season with true game-day food. NACHOS!!! I threw some chicken in the crockpot, shredded it when I got home, and layered chips with chicken, cheese, onions, olives and topped with cilantro, guacamole, sour cream and salsa. Delish!!! 



 
Saturday. Was our anniversary dinner out and I posted a lot about our three course meal yesterday, but here was my favorite - shrimp, crawfish, Andouille sausage and creamy grits. Delish!!!


Sunday. We spent having a pool party at my Uncle's house! We grilled hamburgers and hotdogs and were too busy splashing and chasing kids I didn't get a picture :)
 
What's a typical menu look like in your house?! I'd love any quick and easy weeknight ideas that diners of all interests would like!

  1. Great ideas! I am so bad at meal planning, but we all return to school in a week so I'll have to figure out some quick, easy dinners. I like cooking, but it's so hard when you're tired or stressed, you know? You've given me some meal inspiration, though. Keep it comin'! :-)

  2. I'm not going to lie, I had a hard time getting past the Miracle Noodles. I definitely need to check those out! And those nachos, I am still craving them, they look amazing!

  11. Miracle noodles – what?! That could be a game changer! Breakfast for dinner is always a fun treat especially since we never make big breakfasts here. Mmm the nachos and anniversary dinner look delicious too.
