Simple Spring dinner menu

For Mother's Day dinner we had my parents over and shared a simple but delicious meal. My "entertaining" style is to do as much in advance as possible so I am not stuck in the kitchen cooking while our guests are over. It was such a nice day that we BBQ'd cedar plank salmon and enjoyed a crisp rose wine outdoors. If you have a dinner party planned this spring or summer, or even just for a simple weeknight meal, this one is a healthy and delicious option!!

Have you ever had cedar plank salmon before? We are so lucky to live in the Pacific Northwest where salmon is abundant!! But cooking it on top of a cedar plank offers a delicious and unique flavor!! You can buy cedar planks at the grocery store or any specialty cooking shop. You soak them for a couple of hours and then load your salmon right on! Then we cooked on the BBQ. You can even reuse the planks a couple of times. See below for the delicious recipe we used, as well as our full menu!

Simple Spring Supper Menu
Cedar plank salmon with Dijon glaze (recipe here!)
Mashed cheddar garlic cauliflower (see easy recipe below!)
Caprese salad (sliced mozz, heirloom tomatoes and chopped basil, topped with splashes of olive oil, balsamic vinegar, salt and pepper)
Grilled French bread (we love to BBQ anything and everything! We put our bread slices directly on the grill for a couple minutes to lightly toast - add a little butter and it's delish!)

For the mashed cauliflower -
I chopped a head of califlower into large pieces and steamed it in a pot on our BBQ's burner (so nice to be able to boil water and cook outside - no hot kitchen!). Once it was easy to pierce with a fork, I transferred it to a bowl and used my immersion blender to begin pureeing (you could also use a hand mixer, blender, etc). I added a TBL of butter, a splash of milk, a TSP of garlic, a 1/4 cup of grated cheddar cheese and some salt to taste. Then blended it all right up. Mashed cauliflower is DELISH and less carbs than mashed potatoes. Highly recommend!!
