Salmon Caesar Salad with homemade dressing

We're all about simple dinners around here (especially for busy nights after work). Recently we had some leftover salmon and made a quick and easy salmon caesar salad with homemade dressing. The dressing only took a few minutes to whip up and made for an easy, delicious dinner. 

I love to make our own salad dressings. I never knew how simple it was to make them, and they always taste so much better than the store-bought ones (which also seem to be FILLED with chemicals and unpronounceable ingredients). 

Homemade Caesar Salad Dressing
1 cup mayo
1/2 cup grated parmesan
2 garlic cloves (if you aren't going to use a blender at the end, mince them very finely)
1 tsp anchovy paste (most grocery stores have this by the condiments or canned tuna)
3 TBL lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
Black pepper to taste

Add all to a blender and blend to desired consistency. Let sit in the fridge for 20-30 minutes before serving. 

For our salads, I chopped two romaine hearts into bite sized pieces, washed and added to a large serving bowl. Add garlic croutons and more grated parm. Top with a dollop or two of your homemade dressing and mix well. Top with salmon, grilled chicken or simply eat plain! Delish!!
