Cauliflower "Fried Rice"

So, this recipe is neither fried, nor rice, but it is healthy! Essentially, you make "rice" out of cauliflower. If you've never tried it before, I would definitely recommend!! Grant said it was "good" but I think he a wee bit of "diner's remorse," but I enjoyed it. 

Cauliflower Fried Rice
1 head cauliflower, steamed and grated
1/4 cup green onions, diced
1 TBL garlic, minced
1/4 tsp ginger
2 TBL soy sauce or teriyaki sauce
3 eggs, scrambled
7 oz shrimp, cooked
Dash of red pepper flakes
Olive oil

Cut cauliflower into large florets and steam. Grate using a cheese grater into a large bowl and set aside. Heat a couple swirls of olive oil in a large skillet. On medium high, cook garlic until fragrant, then add green onions and saute 2-3 minutes. Add grated cauliflower and soy/teriyaki sauce and mix while sauteing on high. Add ginger and red pepper flakes. Add scrambled eggs and shrimp and mix well until all is warm. Enjoy!!
