Flu Friday - Ugh!

Hello, from the Goodalls. This week's score is Stomach Flu - 3, Goodalls, - 1 (Lila's the lone gal standing!). Let's just get it out in the open that NOTHING is worse than the stomach flu. Except perhaps, having a one-year-old and husband that ALSO have the stomach flu. And a bouncy three-year-old who wants to play/jump and talk to you constantly while you are laying on the floor in agony.

However! The weekend is here and I'm hoping we all spring back in action in time to enjoy a little fresh air and settled stomachs. 

Here's what we've been up to this week ... 

+ Sunny skies. This week started strong, with more sunny skies and an open sunroof. Rain returned the later part of the week, but it's supposed to be sunny again this weekend. Bring on Spring! 


+ Elsa. Lila's new favorite is playing "Anna and Elsa" (naturally), and she's ALWAYS Elsa. "NOBODY wants to be Anna, Mama!" Did I miss something!? Anna's the nice/funny one. So hilarious ... Owen always get to be Olaf. Ha!! Here we are, hiding from Olaf in Elsa's "ice cave." 


+ Top Ramen. I rarely eat Top Ramen, but after my stomach flu this week it sounded good. It was the only dinner I stomached all week. I have to say, it was sort of amazingly delicious (in a sodium overload kind of way!). 


+ Hair. I scheduled a hair cut/color with a new gal who seems to be the latest rage in town (at least according to online reviews/magazines). I'm trying to grow out my hair again and so was thinking of a shorter version of this look ... thoughts? Pretty similar to what I have now, but more layers and blonder. 

+ Peek! Owen's just the goofiest boy. And so sweet! He hasn't wanted to eat much  this week but I set him on the couch with a little bowl of cereal and he gobbled it up! Yum! He loves to have little bowls of snacks like Lila does after school. Although usually before too long his ends up on his head.

Wanderlust

Traveling the world would be something I would like very much today because there's so much to see out there.

Grant and I were realizing the other day that the year we were married we went on four vacations (including our Honeymoon). Since then it's "slooooowed down" (dramatically) so to speak! I definitely have a bit of wanderlust seeing vacations splashed across people's Facebook pages, Pinterest, TV, etc.

So even if dream vacations aren't likely going to happen for us anytime soon, here are the top five places I  have on my list!!

The Grand Canyon. This should be an easy one for us, considering we're a quick flight to Arizona. This would be a fun one with the kids (maybe once they are old enough to remember?). I love seeing natural wonders and can't believe I've gone 32 years without seeing this one. Definitely on my must list!

Bora Bora, Tahiti. I've ALWAYS wanted to stay in a tropical overwater bungalow. It was on my list for our honeymoon but it's pricey and we decided to go to Costa Rica instead (which was amazing, so I'm not disappointed). However, this is maybe a good 10 year anniversary spot to keep in mind!? Ha!

Paris. Ahh, Paris. I feel like every girl is in love with Paris and I've never been. Everything about the picture below could be part of my ideal lifestyle. Eiffel Tower views, dainty coffee cups, fresh flowers and an al fresco brunch. Oui, oui!!

Lake Louise. Alberta, Canada. I've never known anyone recently to go to Lake Louise, but after seeing it on the Bachelor gorgeous pictures of it, it's been on my list! Beautiful lake and mountain views, and a part of Western Canada I've never explored!

Santorini, Greece. I've always wanted to go to Greece! I loved the "Before Sunrise/Sunset/Midnight" movies with Ethan Hawke and Julie Delpy and the last one, "Before Midnight" was set on the couple's vacation in Greece. Even though it was fictional, their vacation looked so dreamy (minus their couples' bickering ...). Maybe now that Tanya is dating a Greek they could have their wedding there? ;) (hi, Tanya!)

Blue Jean Blues

I have a confession. I am terrible at buying jeans. Even though I wear them almost everyday, I HATE spending a ton of money on them, therefore buy cheap ones that wear out after a couple of wears/washes and then buy new ones. It's a bad cycle. Here's my main issue. I'm short (5'3) so "designer" jeans are always WAY too long for me. I'm also inbetween needing "regular" and "ankle" length (unless they are skinny jeans, "ankle" is always a tad too short). I've gotten a few hemmed over the years, but they always never seem to look the same.

Also, I can wear jeans to work, so I try to go with dark washes that look slightly more professional than light wash/ripped/etc.

I made this little collage of ones I think are cute but not too pricey, but would love other suggestions. Please fill me in! What's your favorite go-to, not super expensive, but still cute, pair of jeans!??! Help!!

Copycat Jimmy John's Tuna Recipe


Grant and I both LOVE the Jimmy John's tuna sandwich, so he found a copycat version online and it's actually pretty close! Now if we could only figure out how to bake their bread ...

Sometimes there's nothing like a little tuna sand on a Sunday afternoon. Here's the recipe.

Copycat Jimmy John's Tuna (makes a lot!)
Six cans tuna in water
1/4 cup soy sauce (yes, who knew!?)
2 small onions, finely diced
5-6 stalks celery, finely diced
1/2 cup Hellman's/Best Food's Mayo




Drain the tuna and squeeze/press really well to get all the water out. Mix everything together. Let it marinate in the fridge if you don't need to eat it right away. ENJOY! Jimmy John's serves theirs with  tomatoes, shredded lettuce and ... cucumbers? I can't quite remember. Either way, it's delicious.

Happy Monday

Let's make it a good one

Happy Monday! I have a crazy week at work this week, my parents are in Cabo (jealous) and so that coupled with our childcare being out of whack is going to make for an interesting week! (Pass the wine). 

We had another beautiful weekend here though so we spent plenty of time outdoors and had friends over for a little game night after the kids were asleep. 

Here was the view on my Friday night commute home. I love that it's staying light out later now!


Saturday morning we went to Matthews Beach on Lake Washington. It was windy but full of sunshine. I love that we live so close to the water!!



After naptime we headed out to our friends' baby's first birthday. Excited to use my "$1 bin" Target wrapping paper and a hair clip as the bow.



Owen had a glorious time - cheeeeeeeeese!!!


Owen's quite the little character these days. Within the last month it's crazy how much he's started "talking" - he'll point and say "Lila!" or "Papa/Mama" ... or ask for "cracker" ... "ball" ... "book" ... etc. He also now makes tons of animal sounds. Such a sweet boy! He also wants to do whatever the big kids are doing. Here he is at the library on the computer.

Happy Friday

Happy Friday! Since I had Monday off for President's Day, this work week was short and sweet. Just the way I like it. We are all home this weekend and I hope to see more of the fabulous sunshine we've been having. 

Here are some of my favorites for the week ...

+ Signs of Spring. We have seriously been having the BEST weather lately. Sorry to my friends on the East Coast, but we've been seeing 60 F in February! Even the cherry blossoms are blooming in our neighborhood, and the first daffodils popped up as well! 




+ Three Cheers for "Healthy" Dinners. I posted about a fried "rice" recipe that's actually made out of cauliflower. It's not quite the same, but if you're trying to health up your weeknight favorites, this Cauliflower Fried "Rice" is a delicious and easy choice.


+ Seeing Red. For me, there's nothing quite like bright red nails. I think the sunshine inspired my mood for bright nails!


+ Festive Favorites. We had remnants of Valentine's Day leftovers throughout the week and it was fun to keep the festiveness! Now looking ahead to ... St. Patty's Day? 


+ Tropical Dreaming. We set the dates for our annual Palm Springs trip this year and it got me inspired to look for some new tropical favorites. I snagged this fun bathing suit and have my eye on these hot pink TOMS wedges ...

True Life: I'm an Introvert

Pssssst! I have a confession. My name is Kaitlin and I'm an introvert.

As a mom of two, I CRAVE alone time. I rarely have any quiet time anymore (yeah, those jokes about never even going to the bathroom alone again are unfortunately true). Usually after the kids go to bed, that's the time Grant and I have to talk, watch TV or have dinner. I even gave up a girls' night this week to stay home and paint my toenails in silence while Grant took the kids to the park.

I came across this article recently and a light suddenly went on - I'm an introvert!! It doesn't really make sense. I'm outgoing, social and get along well with most anyone. But yet a lot of the introverted qualities it seems to reign true for me. Can any of you relate?

10 Things You Need to Know Before Dating the Outgoing Introvert


1. When we see you after a long day, we might be all irritable and not want to talk  (Yes, as in I need quiettttt!!!!!!!!) 

It has nothing to do with you. Outgoing introverts, though still introverts at their core, often need to recharge after a large use of social energy. After a long day of dealing with people, our social batteries are drained and we need to unwind and recover, usually alone. 

2. We’re charming creatures and can be the life of the party, but... (So true! I can be very outgoing ... but half the time would rather stay home!) 

You’ll be surprised how much we actually live in our heads. People often confuse us for extroverts, but we're too introspective and over-think too much to be one. 

3. If we like you, we really like you. 

We don’t waste our time with people we’re not completely crazy about. If we agreed to go on a date with you, we like you. Take it as a huge compliment.

4. We have times when we’re weird with our phones. (This is me! I totally screen my calls and would much rather email/text than talk). 

Some days we can talk for hours, but sometimes we’re not so good at replying and talking on the phone. Don’t take it personally -  we screen our phone calls, even from our closest friends. Outgoing introverts sometimes hate the phone because it’s all, like, intrusive and tears our minds away from whatever we’re deeply focusing on (and we are always deeply focusing on something). Our mind doesn't change direction easily. Listening to one thing and seeing something else is a lot of sensory input piled on top of everything that's already going on in our heads.

5. But don’t worry, in person we’ll listen to you for hours.

We have spectrums of introversion, so we’re good listeners. We’ll always be naturally in tune with how you’re feeling, so we’ll be able to see through any front you put up and make you jump into the deep end.

6. We need to dip our foot in the pool first. 

We need time to warm up, so, like, chill. We tend not to outwardly express our feelings and spill our whole life story in the first hour of meeting you. Or the first year. 

7. Our energy level depends on our environment.

Yes, we can get annoyed easily. If we vibe with the crowd, we can get our energy from human interactions. But if we don’t, we’ll start to get really introspective and reflective, and tend to withdraw into ourselves. It’s kinda like a hit or miss. We’re very selectively social. But it’s not because we dislike people - it's actually the opposite. We dislike the barriers like small talk (which often comes with going out) creates between people, and try to avoid it at all costs.

8. We kinda hate the typical first date. 

Maybe it’s 'cause we hate small talk or something. Over-thinking is like a part of us so at times we enjoy a break from our heads. Be willing to go somewhere authentic where we won’t have to awkwardly sit across from each other asking the typical "get to know you" questions. 

9. You'll think we are flirty with everyone. (This is true for me! Before we were dating, Grant thought I was "really into" this guy who I was just really nice to - which after he got to know me he realized was just how I am with everyone ...)

Okay here's the thing, when we inevitably have to interact with people, we make it seem like there’s nothing in the world we'd rather be doing. It's 'cause we're, like, overly sensitive and so we go out of our way to make other people feel comfortable and happy. We're intuitive and outgoing at the same time.

10. We can see through bullshit.

So don't try to deceive usWe’re kinda like a human lie detector. We will always find out the truth (muhahaha)... just kidding. But for real, we often have a keen eye for detail, noticing things that may escape others around us. 
Research has found that introverts pay more attention to detail and exhibit increased brain activity when processing visual information. A study shows that the brain of an introvert weighs internal cues more strongly than external motivational and reward cues. Since outgoing introverts are a unique blend of both an extrovert and introvert, we rely on our own internal instincts and logic to make decisions and form beliefs. 
So basically you're screwed. In a good way.

Tropical Dreams

We're nearing our annual trip to Palm Springs and I can't wait! We go every spring. It's warm, beautiful, filled with sunshine and my ultimate happy place. Last year's trip was tough because Owen was 10 weeks and in addition to not sleeping, he was in the height of his reflux problems. So because of that, I am that much more excited for this year!!

I always love to find a new bathing suit and a few fun accessories before our trip (although they also have great shopping, so can always find something there too!).

Still adds a hint of fun without being a total "mom suit."

Cauliflower "Fried Rice"


So, this recipe is neither fried, nor rice, but it is healthy! Essentially, you make "rice" out of cauliflower. If you've never tried it before, I would definitely recommend!! Grant said it was "good" but I think he a wee bit of "diner's remorse," but I enjoyed it. 




Cauliflower Fried Rice
1 head cauliflower, steamed and grated
1/4 cup green onions, diced
1 TBL garlic, minced
1/4 tsp ginger
2 TBL soy sauce or teriyaki sauce
3 eggs, scrambled
7 oz shrimp, cooked
Dash of red pepper flakes
Olive oil

Cut cauliflower into large florets and steam. Grate using a cheese grater into a large bowl and set aside. Heat a couple swirls of olive oil in a large skillet. On medium high, cook garlic until fragrant, then add green onions and saute 2-3 minutes. Add grated cauliflower and soy/teriyaki sauce and mix while sauteing on high. Add ginger and red pepper flakes. Add scrambled eggs and shrimp and mix well until all is warm. Enjoy!!

Holiday Monday


Good morning!! I have today off of work so I'm home with the babes (unfortunately Grant doesn't have the day off, boo!), but I'm popping in to say hello and share a few scenes from our Valentine's Day.

First off, the weather in the Seattle area has been BEAUTIFUL! Plenty of sunshine, amazing sunsets and nearing 60. It makes me so ready for spring and summer!!!

Saturday my parents were nice enough to babysit so Grant and I could go out to dinner. I set a little "date" table for them and the kids - and then was a little sad we'd be missing out on their fun!


I wore tiny hearts on my ears and my baby loves' initials around my neck. 




We didn't have reservations anywhere, so we went to a local brewery that we hoped wasn't too packed. It wasn't! And the best part is that it's on the water, so we were able to catch a beautiful sunset, walk around the marina and take in the fresh air. I love living by the water! 



Sunday it was just as beautiful so we hit the beach with the whole family. The beach we went to was right on the train tracks, so Lila was THRILLED when two long trains went by and not only did the conductors wave at her but then honked the horn - so cute! 


Owen tasted the sand a few times - mmm!!!

It's Friday! Holiday Weekend Edition

Happy Weekend Tulips

Yay for Friday, AND yay for a double holiday weekend! Not only is it Valentine's Day on Saturday, but I have Monday off for President's day too! Win!

I have a little Valentine's Day breakfast planned for the kids on Saturday morning and then my parents are coming over that evening so Grant and I can go out to dinner! That, plus some quality lounging time and a box of chocolates (or two) are just what I'm looking forward to. 

Here are my favorites from the week!!

+ Spring!!! Spring is definitely on the horizon!! I spotted these beautiful little crocuses in bloom at my parents' house yesterday. It's been sunny and 60 the last couple days, and even though spring is still a few weeks off I'm counting down the days. 


I was also thrilled when the March issue of InStyle showed up in the mail this week with SPRING splashed across the cover - yes please!



+ Great Outdoors. Now that it's a bit nicer out, AND staying light later in the evening, we've been taking walks after dinner to our little  neighborhood park. The kids have been LOVING the wagon!



+ "Miracle" Noodles. I posted earlier this week about a new recipe I love using "Miracle Noodles" (aka, noodles with zero calories!!!) I even made the recipe again tonight with a combo of chicken and shrimp. Interested? Check it out!!


+ Preschool Valentine. Lila's school is having a little Valentine's Day party today and she was so cute in picking out the valentines she wanted to give her little friends. Naturally, she picked the Frozen store-bought ones instead of the vintage homemade style ones I'd suggested (haha), but she wrote her own name on them and even decided to add "Cars" stickers to the boy ones in case they didn't like Frozen (probably a good idea!). Such a sweet girl, I just love new little traditions with the kids! 


+ Spring Beauty. Speaking of Spring, I posted about some of my new favorite beauty products, including a cheap BB cream that I LOVE! Check it out.
