Quick Sausage & Rice One Pot Meal



You all know I love a good one-pot meal (hello, less dishes!). I also like recipes that are quick, easy and perfect for the whole family. This one-pot sausage and rice dish was just that. It included ingredients I already had at home and both kids gobbled it up! The other nice thing about this recipe is that you can customize it with whatever you have at home (like spicier sausage or a different kind of cheese).



Sausage & Rice One Pot Meal
1 can condensed cream of celery soup
1 1/2 cups water
1 TBL butter
1 lb pre-cooked sausage (I used Hillshire Farm chicken hardwood smoked sausage)
1 6 oz box of flavored long-grain rice (I used Farmhouse herbs & butter)
10 oz frozen peas
4 oz sharp cheddar 

In a deep saucepan with lid, combine celery soup, water and butter and bring to a boil. Add sliced sausage and box of rice. Reduce heat; cover and simmer about 15-18 minutes until rice is almost tender. Stir in peas. Cover and simmer for 15 minutes more until rice is tender and peas are heated through. Sprinkle with cheese and cover until melted. Let stand 5 minutes, and serve.
