Happy Friday! We're sooo excited for this weekend, because not only is it Super Bowl Sunday, but our HAWKS are playing - woo hoo! We're going to have a taco bar and lots of other goodies and hope for a win!


Here are my other favorites for the week!

+ Sweet Snuggles. Nothing cures the sniffles like a little snuggle time on the couch! Lila's favorite "treat" now is to be able to eat on the couch. Oh, the little things. 


+ Sunshine. I've posted this week about how nice our weather's been and I seriously can't get enough (in fact, yes, I'm counting down to summer already). Nothing puts us all in a better mood than when we can get outside and get some fresh air!


+ Peek a Boo! Owen's new favorite is to hide behind his blanket and then say "BOO!" It's so sweet. He's such a joy!


+ Pesto Pasta Salad. I posted this delicious recipe earlier this week. It's a great side or main dish - and, it's based on a recipe from the Pioneer Woman (love her!) so check it out


+ Life Lately. I also posted some of my new favorites this week, including my recent favorite movie, video, and everyday drink!

Fresh Air


The weather around here has been so gorgeous! Sunshine shining through. Sometimes, getting outside and getting some fresh air is just what's needed to make the afternoon. 

Yesterday after work we spent the early evening at the park in the sunshine.

Owen enjoyed apple slices (and bark) ... 


And now whenever I try to take his picture he wants the phone ...

We've never tried to let the winter weather keep us indoors (mainly because of Grant's cues), but I can't wait for the longer evenings of spring and summer!

Currently Loving ...

Smile :D Even if you don't feel like it, eventually your brain will catch up with your face and you will be happy happy happy!

We've had a lot going on lately, but here's some of the things I've been loving lately ...

Favorite Movie ... "Boyhood." Grant and I watched this the other night and I really liked it! If you haven't heard about it, they filmed the movie slowly over 12 years. It's a coming of age story about a little boy and his family, so as the movie goes along, it's really the boy aging along with it. SO interesting and unique! I did get a little sad seeing the cute boy turn into a brooding teenager (my sweet Owen will never grow up, right!?), but it was a really cool story and way to see the cast age in real life throughout the movie. It's available on video now too.



Favorite Funny ... "Farm Hunk" skit on SNL. If you are a Bachelor fan and didn't see this skit on SNL, you have to watch it. Blake Shelton was the host and plays the Bachelor, and the various girls are so hilariously spot on to some of the girls on the show, I thought this was pretty funny.



Favorite Drink ... Lime Pellegrino. I've been trying to drink more water so my new favorite is sparkling water with a couple lime wedges. And it feels like a cocktail - win!


Favorite Read ... February Issues. I haven't had a ton of time for books lately, so I've been loving recent magazines. All of the February issues are so fun, especially the current issue of Conde Naste, which features romantic getaways. I could really go for one of those right now!


Favorite View ... this sweet boy. Owen always has a car in hand now, and now when I make dinner he's constantly at my leg "driving" one of his cars up my leg. He even makes a little "car noise." It's too cute!!

Pesto Pasta Salad


I made this for a recent family gathering and it was a great side dish, but really could be a main course item if you wanted! I found a similar recipe on the Pioneer Woman (love her) and made mine my own based on what I had on hand.

Pesto Pasta Salad
1 box penne noodles
1/2 cup prepared pesto (or make your own!)
1/2 cup shredded parmesan cheese
1/2 cup mayo
1/2 cup sour cream
1/4 cup milk (or maybe a little more for thinning)
Salt and pepper to taste
1/2 cup sundried tomatoes, chopped into bite sized pieces (I used the jarred kind packed in oil). 
1/2 cup goat cheese crumbles 


Cook your noodles according to package directions, drain and rinse with cool water. Drain again and set aside (try to make sure they aren't still really "wet" when you add the dressing). To make dressing, whisk together pesto, parmesan, mayo and sour cream. Slowly add milk to your desired consistency, or until it's a good "salad dressing" consistency. Add salt and pepper to taste. Mix dressing with cold noodles. Add chopped sundried tomatoes. Top with crumbled goat cheese. Mix together gently. Add more parmesan, salt and pepper to desired taste.

Monday, Monday


Happy Monday! As you may have seen on Friday, my sweet grandpa, who we called Papa growing up, died on Wednesday after he just couldn't quite recover from heart surgery. Our whole family got together on Sunday (all 30+ of us!) for dinner to remember our Pops and enjoy each other's company. It was a bit weird without him there, but we had lots of great stories and memories to reminisce about all the fun we had with him.

My mom and I spent the day with my grandma on Saturday, helping write his obituary. It's so hard to boil someone's life down into a few short paragraphs! And although sad, it was fun to remember some of the goofy stories and jokes he liked to tell. Hopefully he'd like it!

In more uplifting news, the weekend here was beautiful - sunny and 60!? That's early summer weather around these parts, and definitely not January weather. And not that it needs an announcement, but I'm definitely ready for spring!

Home.

After another long week of biz travel, I'm finally headed home. Unfortunately, after our work dinner last night, my dad called to say my sweet grandpa had died that evening. He'd been in the hospital for a couple months following heart surgery, so not completely unexpected, but still sad and hard to hear while out of town. SO, I spent a frazzled last day in Austin before heading home.


So, needless to say I'm ready to be home with family!

PS - Despite all that, how sweet is Owen? He's still loving his Lila's pink chair! I think maybe I should get him his own (since naturally they fight over it now that we've left it in the living room).

When in Texas...

Today was filled with work meetings but that doesn't mean we didn't have time to experience a few musts in Austin - seeing the Texas State Capitol Building and indulging in amazing southern food!!

Unfortunately it was a totally "Seattle-like" day with misty rain - boo! Where's the sunshine!? Despite the rain, I thankfully brought my fav warm sweatshirt dress to stay comfy during a day of meetings.



The Texas Capitol is very cool and the Governor's mansion is right nearby as well! My dad reminded me on the phone tonight that the Texas State Capitol building is actually one of a few that are taller than the US Capitol building in DC, which he said is because "everything is bigger in Texas." Naturally! If I were in town longer I would have loved to go on one of the tours - I love historical sites, but for this trip I just got to see it from the street view. 


And then the most important part - DINNER! We went to Fixe in Austin - a new southern restaurant, which was soooo good!!! We ordered family style. 

First course - deviled eggs with salmon roe on top. 


Second course - "sweet and savory" homemade biscuits with choices of marionberry jam or spreadable andouille sausage. I had a half of the biscuit with each, and while I prefer the sweet jam, both were so good. 


Third course - boneless fried chicken with honey glaze, atop a kale salad. So good!!! 


Fourth Course - shrimp and grits! Sooooo good. 


And as if that wasn't enough - we had tons of desserts too, but I didn't get any great pics. The sweet potato pie with marshmallow topping was my favorite. 

Let's just say southern food isn't light - I felt like I needed to be rolled out of the restaurant. But if you want an amazing dinner and ambience in Austin - definitely try Fixe!

On the Road Again

I'm on another work trip this week, my second already in January. It's funny - when I first started in the working world I thought business travel would be SO cool. But frankly, it's not that great. I'd rather be at home with my sweet babes! 

This week I'm in Austin, Texas. Here I was yesterday at the airport - so glamorous, and the laptop is always open. 


And straight to working in the hotel room ... 


Before I knew it, it was late and dark. So I watched the State of the Union address with a takeout sandwich and then it was straight to bed!



It was also the Texas Governor Inauguration and ball in Austin last night so there were lots of ball gowns and tuxes in the hotel lobby! Someone must have forgotten my invite ... 

The good thing is that my family sends lots of pics while I'm gone. My mom sent this one of Owen swinging today - look at his three little teeth! So cute. He LOVES the swings and if you take him out too early he cries and points to get back in! So sweet. 


And Grant sent me this of Lila last night in the tub - love my sweet girl.

Chicken Piccata


So, who knew my husband was on Pinterest (hi, honey!). Apparently he realized that in addition "girly stuff," it also had yard and house projects galore. On a recent weekend night, he shunned my planned salad and grilled chicken for dinner and wanted something "more indulgent." He found this recipe and luckily we already had everything at home. And it was de-LISH! I don't know if this is classic chicken piccata, but nevertheless, it was a buttery, lemony, capery (is that a word?) dinner and did not disappoint. 




Chicken Piccata based on this recipe

Sauce
12 tablespoons cold unsalted butter, cut into 1⁄2-inch pieces, divided
2 Tbsp finely chopped yellow onion (we used about 6 TBL) 
2 garlic cloves, minced 
1⁄3 cup white wine 
3 Tbsp fresh lemon juice 
Kosher salt 
Pepper 
1/4 cup capers, rinsed 

For the Chicken: 
4 boneless, skinless chicken breast halves (or use cutlets) 
2 Tbsp grated Parmesan cheese 
1/3 cup flour 
Salt and pepper 
Couple "swirls" of olive oil 

To Cook:
Cut the chicken breast halves horizontally, butterflying them open. Pound chicken pieces with a meat hammer to 1/4-inch thickness. Mix together the flour, salt, pepper, and grated Parmesan. Dredge chicken cutlets in the flour mixture, until well coated. 

Add a couple "swirls" of olive oil in a large skillet on medium high heat. Add chicken and brown well on each side, about 3 minutes per side. Remove the chicken from the pan and reserve to a plate. Cover with aluminum foil and keep warm in the oven while you prepare the sauce. To prep the sauce, melt 1 tablespoon of the butter in a medium pan over medium heat. Add the onion and cook, stirring often, until the onion is translucent but not browned, about 3 minutes. Add garlic. Cook for about 30 seconds. Add the wine and lemon juice and bring to a boil over high heat. Cook until the liquid is reduced to about 2 tablespoons, about 5 minutes. 

Reduce the heat to its very lowest setting. Slowly whisk in butter, one piece at a time, letting the first addition melt before adding more butter. Season with salt and pepper. Stir in capers. 

We served on top of linguine and finished with a generous heaping of freshly grated parm! Delish!!!

Happy Monday!


Let me start by just saying ... the Seahawks are going to the SUPERBOWL!!!!!! Wow, not sure how many of you follow football, but what a game. So exciting!!!! It was definitely an awesome cap to a really fun weekend.

On Friday night Grant and I went out on the town!! We went to Seattle to see a dinner theater/cabaret type show. The building is an original Moulin Rouge "spiegeltent" that has been restored and an amazing 5-course dinner is served throughout the performance. The show included a live band, fun storyline, ballet performer, circus acrobatics and was just really cool. We stopped for cocktails beforehand and enjoyed a glass of champagne with dinner too. They didn't allow photography during the performances, but I snuck in a photo at the end before we left. Would love to do this again soon!





Saturday we hung around home and had a leisurely day in PJs.




That evening we made some amazing BBQ'd blue cheese burgers and sweet potato waffle fries - MMM!!!


Sunday, watching the Seahawks game took up most of our day. The game went into overtime so it was a good thing we had plenty of snacks on hand! Go HAWKS!
