Healthy Crockpot Taco Soup

With all of the overindulging that goes on this time of year, it's nice to have a few go-to healthy recipes during the week to load up on veggies. This soup recipe is one of my favorites. It's healthy, easy and filling. Let's just get it out in the open that it doesn't make for the most glamourous food picture. But, once you get over that I swear you'll like it.

I even mixed it with rice for the kids and they loved it! 


Healthy Crockpot Taco Soup
3 cups chicken broth
1 cup water
1 can diced tomatoes
1 small can diced green chiles
1 TBL cumin
1 TBL chili powder
1 TBL garlic powder
1 tsp onion powder
1.5 TBL seasoning salt
3 chicken breasts (mine were frozen)
2 cups chopped cabbage
Top with sour cream and shredded jack cheese (optional)



Combine everything except toppings into a crockpot. Cook on low for 8-10 hours. Before serving, remove chicken breasts and shred with two forks. Add back into crockpot and mix all together. GIve it a taste test and it may need a little more seasoning depending on how you like it. Serve in large bowls. I like topping with a pinch of jack cheese and a dab of sour cream.
