Homemade Pizza

I mentioned last week that Grant and Lila recently spent a weekend afternoon making us pizzas for lunch (with lots of leftovers!). They made their own sauce and dough, watched the dough rise, rolled it out, put on their toppings and cooked them on the BBQ! (OK, so only Grant did that part). Lila LOVED it! It was such a fun little activity for her and Grant to do together. She loved wearing her apron, using the rolling pin and methodically placing each little topping exactly where she wanted it. They made a huge mess, but had so much fun!

Homemade Pizza Dough:
1 t. active dry yeast (1/2 of a packet)
1.5 c. warm water (110 degrees)
4 c. all purpose flour
1 t. kosher salt
1/3 c. olive oil, plus more for oiling bowl

Dissolve yeast in water.

In stand mixer with paddle attachment (or a hand mixer), combine flour and salt. With mixer running on low speed, slowly add olive oil and mix till combined. Pour in yeast mixture and mix until combined.

Coat a separate med.- lg. mixing bowl with light amount of oil, then dump dough in. Form a ball and turn dough to coat all sides with oil. Cover tightly with plastic wrap and allow to rise for at least 1 hr., or up to 3 days, refrigerated. Bake at 500 degrees with toppings for 12 - 15 minutes (Grant cooked ours on top of our pizza stone on the BBQ). Makes 2 - 3 pizzas.

1 6 oz can tomato paste
6 oz warm water
3 TBL grated parmesan
1 tsp minced garlic
2 TBL honey
3/4 tsp onion powder
1/4 tsp dried oregano
1/4 tsp dried marjoram
1/4 tsp dried basil
1/8 tsp cayenne pepper
1/8 tsp red pepper flakes
salt to taste

In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese

Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

Topping Ideas
Pepperoni & Green Pepper (Lila's) tomato sauce, mozz, pepperoni, green peppers
BBQ Chicken Pizza (Grant's) BBQ sauce, mozz, chicken (leftover beer can chicken from the night before), cilantro, red onion & a drizzle of BBQ sauce on top (cilantro was put on after cooking)
Greek (Mama's) tomato sauce, mozz, salami, kalamata olives, peppercinis, feta, red onion
