"Healthy" Pancakes

Our family loves a good pancake. With a huge slathering of butter and syrup, these giant pancakes are right up our alley. But wait! These are actually some of the most healthy and delicious pancakes I've ever had. Trading boxed batter for fresh cottage cheese and oats, these tasty (and deceptively delicious) treats felt like a very indulgent breakfast.

Mix together:
1/2 cup of old-fashioned oats like these
1/4 cup of low-fat cottage cheese
2 eggs
A dash each of vanilla extract, cinnamon, and nutmeg. 

Process in a blender until smooth. Cook the mixture like a regular pancake.

We added an apple to the blended mixture and it was a highly recommended addition. Our version is topped with a little smart balance butter substitute and pure maple syrup. Fresh fruit would be delicious too!
