Baked Chicken Parmesan



Chicken Parmesan is a classic stand by, and with a few simple changes, a surprisingly healthy choice. (Plus, if you cut out the egg and flour, you can add more mozz, right?!)

This version is a delicious and simple take on an old Italian favorite. I like serving with a side of linguine and a crisp spinach salad (or in Lila's case,  two mini breadsticks, banana slices and oranges!). I even had one small chicken tender I used to make Lila her own "whole" piece!
