Daddy & Daughter

When we first learned we were having a baby girl, I was thrilled. Grant was too, but he definitely thought we'd have a boy first. He wanted a son to pass on his love of "fixing things," the outdoors, hiking, etc. (now that we have Owen, we are lucky enough to have one of each!).

The funny thing is ... Lila loves to "work" with her Papa! She has her own tool bench in the garage and loves to pretend to "work" on our cars. (This year in our haste to get out of the house on Easter Sunday, I didn't notice Lila "changing my tire" in her Easter dress, which by the time I found her was covered in black grease).

She was so cute this past weekend when she wanted to help Papa change the oil on my car. Though, I think she mostly liked wearing the safety glasses :)

Cauliflower & Ham Au Gratin

One of my favorite meals around the holidays is twice-baked potatoes. However, it's not the most healthy dish for a standard weeknight. This cauliflower and ham au gratin recipe from Kalyn's Kitchen is such a great alternative! The cauliflower and ham are a perfect pairing and you would hardly know there aren't any potatoes included! This was also a great recipe to get a heaping spoonful of veggies into a certain toddler's tummy.

I made this recipe as written ... although I may have a bit more a lot more cheese.

Oatmeal Chocolate Chip Cookies

Baking cookies is almost worth it for the smell alone. This thick, chewy recipe from my favorite Smitten Kitchen is a dense, burst of hearty oats, the perfect afternoon snack! I swapped the raisins for chocolate chips, but they are delicious either way!

Lila is at the stage now where she loves to help too! She even has her own apron and oven mitts!

Plus, the oatmeal makes these "healthy," right? ;)

Wedding Weekend

Ahh, Suncadia.

We're back from a weekend of wedding festivities for our friends' wedding. The wedding was actually at Swiftwater Cellars winery, but I always think of the whole area as "Suncadia."

Suncadia is about a 1.5 hour drive from our house. We left at naptime so the kids would sleep in the car and made our journey over the mountains. We checked into a cute cabin in Roslyn that I found on VRBO and got all set up before heading out to the rehearsal dinner (Owen's "room" was a walk in closet!). Nee Nee & Papa Puppy came with us to help babysit for the weekend!

Saturday, Grant was gone all day for "groomsmen" activities, so after a relaxing day at the cabin, I met up with him at Swiftwater.

The wedding was beautiful and the venue was perfect! Great wine, amazing food and an overall beautiful day!

I definitely want to go back on a weekend when we have more time to explore the area and relax!

We're heading on a short road trip this weekend to attend a wedding! We rented a cute cabin complete with a community pool so hopefully we can get some more use out of Owen's darling sunnies and mini boardshorts!

Future Foodie

all foodies start with princess-themed cutlery, right?

Even though she's three, Lila is a pretty good eater. She eats almost everything - especially if it's someone else's food.

But if you were to ask, "Lila, what's your favorite food?"

"LUNCHABLES!" she'd reply.

Mmm! Nothing's more delicious than processed meat and cheese!

I love to cook, but it's hard to work full time, come home, feed a baby and then cook a lavish meal - all before bedtime starts two hours later.

Even though we should all eat dinner as a family, since Owen doesn't "eat" much food yet, and Lila is starving after preschool, sometimes Grant and I eat after she goes to bed.

So - this is where toddler meal planning comes in.

I've found some fun ideas on Weelicious. Most all of the recipes are healthy and look adult and foodie friendly too!

And of course, there's nothing better to make you feel like a failure give you good ideas than Pinterest.

This article - "How to Eat Dinner with a Toddler Without Losing Your Mind" - has some interesting insight. #5 and #6 are my current favorites, although I think #12 is the most important to keep in mind. And if all else fails, #9!

Father's Day

Father's Day weekend was a quiet (and rainy!) one for us. It was Grant's third Father's Day, but his first as a Papa of two! We celebrated with a delicious brunch, complete with a "handmade" gift, and spent the rest of the day at the park, napping and watching Frozen. 

at least the kids were excited to be up early! 

nothing says Father's Day like homemade art! Lila even gave ME a Father's Day gift :) 

I made a super simple lemon raspberry bundt coffee cake. Scrambled eggs with havarti, tomatoes and onion, fresh fruit and of course, lots of coffee. 

I based my coffee cake off of this Orange Cranberry Bundt recipe (which is my favorite to make during the holidays), but swapped the orange and cranberries for lemon and raspberry. It a delicious combo - perfect for summer!

A week before Lila's birthday, I asked her what kind of birthday cake she wanted. 

"A BLUE cake, Mama. A blue THREE cake. Because I'm three!" 

Made sense. 

I contemplated making a traditional round cake and doing a big three on top, but that wasn't very exciting. 

Then I found these cakes on Pinterest. 

So cute! I decided to go for it, but let's be honest ... I am not that talented. 

So, I settled on a simpler version without the M&Ms.  I made this Mississippi Mud bundt cake recipe. I made two bundt cakes. I cut one in half, and cut a small wedge out of the second one. 

Then I positioned them on a lined baking sheet and began frosting. I put a couple dabs of blue food coloring in the frosting for a pretty "Tiffany's Blue" color. Then I topped with rainbow sprinkles and "Happy Birthday" candles. The cake was so easy and so delicious too. Cream cheese marshmallow frosting?! Yes!

She was thrilled!

Fruits of Summer

Our raspberries and strawberries are in bloom!! We have been watching for a couple weeks now. Every day after school Lila has asked if we can go "pick bewies" yet ... and finally it seemed like overnight there were some bright red fruits waiting for us! 

Mmm ... so good. Although not many berries make it into the bowl, and even less make it into the house!!

welcome to little goodies!

Welcome to little goodies!

It's been a whirlwind year already for the Goodall family.

We kicked off the New Year with the birth our second baby, sweet Owen.

He's now 5 months old and as sweet and smiley as can be!

In March we braved taking both kids on our annual trip to Palm Springs, which definitely solidified my desire to become a Snow Bird (... at the age of 31).

In May, our darling Lila turned THREE! I put my baking skills to the test to make a giant "three" cake. Double chocolate cake, coupled with blue cream cheese icing and rainbow sprinkles and she was thrilled! On her wish list this year? A robot!

We're excited for a fun summer ahead. Keep up with us as we navigate through a lovely little life as a family of four!
